In today's society individuals and families are learning how to conserve their resources. To save on gas we cut back on driving and even car pool with a friend to save money. We have also learned to cut back on allowing the faucets in our home from wasting water, and we now learned that cutting a light off when its not in use saves energy. All of this is done to conserve to save money trying to save a buck or two. In this tough economy, Nourishing Gardens would like to help you to save even more money by providing recipes that are cheaper to prepare and will use foods that we would normally throw out to the garbage, we will be able to use to prepare health foods for our families.
Banana Bread
When your Bananas are starting to get dark brown spots on them most people believe that they are going bad but really they are just beginning to ripen. This is the best time to eat them because they have a sweet flavor. But when they turn completely black most people will not eat them this way. But before you throw them out try this recipe and we promise that you wont throw out your old bananas anymore.
- 1- 3/4 cups sifted all-purpose flour
- 2 tea sp. double-acting baking powder
- 1/4 tea sp. baking soda
- 1/2 tea sp. salt
- 1/3 cup soft shortening
- 2/3 cup granulated sugar
- 2 eggs, unbeaten
- 1 cup mashed ripe bananas (2 or 3)
Directions
Start heating oven to 350 degrees F., and grease a loaf pan. Sift flour, baking powder, soda, salt. With electric mixer at medium speed (or with spoon), thoroughly mix shortening with sugar, then with eggs, until very light and fluffy - about 4 min. altogether. Then, at low speed, beat in flour mixture alternately with bananas just until smooth; turn into pan. Bake 1 hr., or until cake tester, inserted in center, comes out clean. Cool in pan 10 min.; remove. Cool overnight before slicing.
